Avocado and banana cake & ice-cream!

Imagine being able to enjoy a recipe in two different variations, same ingredients but in different temperature cooked or preserved!

One of the recipes I am enjoying the most is sweet but sugar-free desserts! and creamy at the same time… can you guess? Avocado and banana… mmm a good combination right? you can enjoy it hot as a pudding and cold as an ice-cream, and eat the same recipe at the same time in different ways !!!

Here you go!

You do not need a round base to do a cake! you can use a rectangular base and cut the pieces in triangles, creating a circular cake! 🙂

WHAT WILL YOU NEED?

The base:

  • 3 medium avocados
  • 4 ripped bananas
  • 4 tbsp of yoghurt or cream cheese
  • 60g chia

Note: I finally chose cream cheese. Maybe if you are a super sweet tooth, try to add yoghurt instead of cheese. Also, the pudding will be softer and fudgy and the ice-cream not so densely heavy.

Cover/Toppings:

  • 1 tbsp cocoa
  • 1/2 tsp vanilla extract
  • A pinch of desiccated coconut

Note: The Cover is created by adding these ingredients to a bit part of the base.

HOW TO MAKE IT? A quick video here 

Super easy & quick!
Different variations: 
– Cake or pudding? 180d oven for 50min and leave it a few minutes to be warm and no so hot.  more times passes, the pudding will be more solid and for me at least… tastier!
– Ice-cream? Freeze the mix for 2h and ready to enjoy!

Note: you can enjoy both at the same time! Just bear in mind, this is a heavy mix so a small portion of each would be more than enough as a snack or dessert or even breakfast!

If you try the cake or pudding a few days later, it will be more solid and not so unstable like a pudding, you will be able to take it with your hands without fall down.  It is really up to you… if you prefer a fudgy pudding, try it after a few minutes or wait for 2h to enjoy it along with the ice-cream!
NOTE: These pizza bases only take 3-5 minutes to cook so any vegetables should be cooked before you put them on the pizza – not fully cooked, but cooked is ideal.
