Halloween Breakfast – Pumpkin Cookie & Juice

What a scary and lovely celebration Halloween is! The colder a country is, the bigger the celebration is, which is great! A reason to create a warm yummy breakfast plus a natural juice to get you in the Halloween mood.

This recipe was created by adding similar orange coloured ingredients. It’s the Halloween colour, right? 🙂 Plus, some ingredients that are easier to digest and that we feel like eating when it’s cold outside.

The combination of these ingredients helps with constipation so eating a few cookies in moderation might help you to poooo, yes, to go to the toilet 😀 But, if you exceed the number of cookies allowed, let’s say more than 6, they might have the opposite effect, feeling swollen and pain in your stomach, so…

Here we go!

WHAT WILL YOU NEED?

For 8 cookies – 1 tbsp size each cookie

COOKIES:

  • 60g of porridge
  • 2 tbsp of coconut oil – Dr Coy’s
  • 2 tbsp linseeds
  • 1 tbsp chia seeds
  • Half of a medium-sized Pumpkin

JUICE:

  • 100ml Coconut Milk
  • Half of a medium-sized Pumpkin (or around 100g of Pumpkin)
  • 50ml water

HOW TO MAKE IT?

Just carve out a medium-sized pumpkin with a spoon and leave it in a bowl. You’ll use it later to cover the cookies and create a Halloween Pumpkin flavour.

Add 60g of porridge in a bowl and fill it up until the top of the porridge with water.

Heat it up for 1minute or 1 minute and a half, mix it for a few seconds and heat up again the porridge for about 1 minute. This way, the base will be very dense and tastier.

Add 2 tbsp of Coconut and, once mixed with the mix, add the seeds, 2 tbsp linseeds and 1 tbsp of chia, until achieving a mixed and dense base.

Once done, lay the base with a spoon on a tinfoil-covered baking tray, ready to go in the oven, and add the Pumpkin flavour on top.

Bake for 30 minutes at 180 degrees. After 30 minutes, you can eat the cookies warm and creamy… or leave them overnight in the oven and eat them cold the next morning. Both ways are soooo delicious! You can also heat them up again in the microwave the next day!

For the juice, add the Pumpkin in the blender and once it is liquid, add the milk and water and mix it all together.
