HOMEMADE SWEET POTATO PANCAKES
The combination of these ingredients makes super fluffy, delicious pancakes without sugar at all!
Well, you guys know how much I love pancakes!! I usually eat them three or four times a week, either at my favorite place, ok let’s call that restaurante… my second home 😀 or made by me at home.
When to eat it? I like to eat pancakes in the morning or during lunch instead of bread, on the side. Also as a snack with a cup of tea or hot chocolate.

WHAT WILL YOU NEED?
The mix:
- 300g
- 4 tsp baking powder
- 1 tsp or a pinch of salt
- 1 tsp of nuts (I love adding ground walnuts, so soft and crunchy at the same time)
- 2 eggs beaten
- 200g milk (around a cup)
- 2 tsp butter, melted
Topping:
- dark chocolate (the less sugar chocolate you can use is 80% cocoa) or directly cocoa (0% sugar)
- My favorite topping is maple syrup. You can also add honey.
- Some berries like strawberries.
- Toasted nuts are super delish! or simply nuts or peanut or almond butter. If you are a sweet tooth, maybe add cashew butter ;p
I highly recommend trying all toppings and seeing which combination of them you like the most!
HOW TO MAKE IT?
I like to put apart each ingredient and go one by one.
Place sweet potatoes in a medium saucepan of boiling water, and cook until tender but firm, about 15 minutes. Drain, and immediately immerse in cold water to loosen skins. Drain, remove skins, chop, and mash.
Once the sweet potatoes are boiled. Stir the egg and add all of the ingredientes.
When you have the mix, add with the big spoon the mix to the pan until creating a good round pancake. Remember the mix will grow gradually while cooking. Don’t add a big spoon…
