Quick And Healthy Office Snack

Nowadays we live a non-stop busy life where we spend long hours without eating between meals or, if we do, a not-so-healthy snack in a package.

A healthier option would be a piece of fruit, a boiled egg, 2 crackers or a handful of snacks, wouldn’t it?

So what if we combine all of them in a delicious snack with the perfect nutrients?

WHAT WILL YOU NEED?

  • 2 eggs
  • 2 slices of rye bread
  • 2 babybels cheese or 2 pieces of 20g of other cheese
  • 1 tbsp crushed goji berry
  • 6 berries. I chose raspberries because that’s what I had in the fridge at that moment! But a mix of berries, or any of them, can be added as a topping on the toasts.

HOW TO MAKE IT?

Beat the eggs.

Chop the goji seeds or put them in a blender to grind them into really small goji seeds. This will give a sweeter flavour around the whole toast.

In order to feel the cheese as well around the whole toast, cut the cheese in small pieces and add it to the beaten eggs.

Put the bowl with the eggs and the cheese in the microwave for about 1 min if you like harder cheese and a more liquid egg or about 2 min if you prefer to enjoy a dried egg but melted cheese.

In order to get all the vitamins from the eggs, I recommend to add the yolk and the egg white, but you can always separate the egg white from the yolk if you want.

Add the eggs with the cheese with a spoon over the rye toasts.
