Recipe of my event… Wednesday 17t :) “how to turn “no taste porridge” into delicious meal or snack?”

 

How did this recipe come about?

Well… first of all, I discovered porridge when I moved to Ireland. That’s when I also discovered that porridge by itself is not tasty. But it was present in most people’s breakfast!

In the beginning, I thought it was like any other of Kellogg’s cereals but prepared only by adding water… even so, I liked it. Until one of my colleagues showed me how to really enjoy it, buy adding water or milk and heating it up in a microwave or a pan until the porridge is cooked and it becomes soft and creamy. It was then when I started to really enjoy it.

I saw how almost everyone used to add banana and peanut butter to it. Again, peanut butter is something that I was not completely aware of as it is not common at all in my country.

Coming from Spain, where the food is fresher and lighter, there are not so many “dense masses” like this, I never thought this could be for me.

So, combining the 3 nutrients; porridge, banana and peanut butter was something unusual to me but I started trying it by myself. It is such a powerful breakfast in terms of nutrients that it helps for concentration and keeps you satisfied well until lunch.

After getting tired of the same breakfast, or at least of adding the same ingredients to my porridge over and over, and especially after quitting processed sugar in January 2018,  I started cooking more and more savory meals.

I usually like plain food so I thought one of the most tasteless foods by itself, like the porridge, could have a better flavor if I mix it with white rice? And that was what I did. The combination of plain porridge and steamed rice gave a powerful taste to the mix.

Maybe because of the white color highlighted in the recipe, I added something even whiter, cheese! But not any cheese, Goat’s cheese.

This base was just unreliable…

I tried the same recipe but adding quinoa instead.

Both combinations were so delicious… that I finally decided to mix rice and quinoa in the same recipe, plus the common ingredients, porridge and cheese.
